There is indeed going to be a cafe/coffee shop on the corner, run by the organization and open to the public.

Have they announced that it will be run by Episcopal Homes? The last I heard from Episcopal Homes, several months ago, was that they were looking for an independent cafe.

Maybe it had just sounded like it would be EH-run. I could be wrong; I don't have any inside info.

Would probably be a good spot for a Ginko, since they already know how to operate in Hospitals and such...

They have their main store on Snelling, and 4 Hospital Locations.

Latest word is that there will NOT be a coffee shop going in on the corner as originally thought and instead it will be some kind of retail.

On a similar (location-based) note, Iris Park (the only piece of green on University) is getting funded to have some sort of park improvements done to the northern half that abuts University in the latter half of 2014.

What do you all think an urban park needs to showcase itself better in the 21st century?

The corner retail element is gone. Episcopal Homes said nobody was willing to move in with the amount of parking available. Instead there will be an "open to the public" gym for the elderly.
