This article from May about the Wayzata Red Cow said that the NE development was next on the list, probably in 2024. I guess demoing now tracks with starting construction in the spring? Can't really blame them for canning the brewery component with the current issues in that market.
But the mixed-used development with a ground-floor Red Cow Brewery that Shimp was planning in Northeast Minneapolis before the pandemic is definitely still in the cards – it just won't happen until 2024 at the earliest. "That most likely will be the next item for us on the agenda," he said.

That parcel is currently zoned at a transit 10 built form requiring a 6 story minimum. I'm interested to see if they'll rezone it or allow it through variance.

Big Star Tipsy Taco Bar will be opening in the spring in the Betty Danger's space. Looks like it's pretty much just a menu change from Betty Danger's, the mini-golf and ferris wheel will be staying. Hard to imagine it lasting for too long, but it beats having the building stay vacant until someone figures out how to get apartment buildings financed again.

I would guess that pretty much any concept moving into the old Betty Danger's space was going to have to embrace the ferris wheel at least and maybe the mini-golf. Removing either of those two things would probably be expensive and why take away a revenue generators vs maximizing the potential
