I don't think I've seen it mentioned yet. The connection of the Cedar Lake Trail to Cedar Lake Road just south of the West End in St Louis Park. There are about 4-5 desire paths on either side of Hwy 100. The approved path is to go up and around on the bridge.

I'm on that end of StC on occasion and I see people crossing US10 there all the time. It's terrifying, really.

It isn't in MN but here is a desire path I used a couple times that got turned official. Guess they were afraid of liability issues. A pedestrian crossing over railroad tracks in Ft. Collins CO

I don't know if that is really effective, haven't been back in years. It was done as part of a transit project.

There's a new ~750 foot chain length extension of the fence north of the cedar lake trail. It now extends east of Quentin. As of a week ago it was still intact.

Looking at that set of paths in St. Cloud, it's pretty apparent that everyone is heading to/from the Cash Wise Foods grocery. There's a surprising concentration of apartments and hotels around that whole area.

I don't know why I'm doing this but,
This second one connects the 42 Hoops youth basketball (with the triangular parking lot in the upper left) to the Hardee's (in the lower right). Cheap fast food and youth sports, difficult to keep them apart.

not sure if this is exactly a desire path, because it is for cars, not people (desire road?), but there are a few ruts on my exit from 35w south (11th ave). I have seen people use these to ditch traffic on i-94 during rush hour and bail onto the local streets instead Image

There's a new ~750 foot chain length extension of the fence north of the cedar lake trail. It now extends east of Quentin. As of a week ago it was still intact.
Although the fence on the north side of the tracks now extends further east, it appears one can hug the north side of it into some bushes and get through. I'm sure those bushes will be trimmed soon.

Not a desire path, per se, but one time a tornado decided to create a desire path from Theodore Wirth Park to Weber Park, and you can still see it from space years later:
